The Winery
Having purchased Marlings Vineyard we decided to re-equip the winery. In 2007 we installed modern facilities letting us use gentle methods which enhance the styles of wine produced. Grapes are hand picked to ensure that only the best fruit is turned into wine, then carefully crushed before the fermentation begins.
Our Wines
Our wines will change subtly from year to year. Whilst the overall styles remain similar, the weather during the growing season determines the sugars,
acids, flavours and aromas in the grapes at harvest time.
Why three cows?
Our wines’ character is intimately linked to The New Forest and the site of the vineyard. Those who visit, will appreciate the small scale of the
operation, with every part of the process being very hands on. They may also notice we have cows in the field next to the vines. Just three cows in fact, and that overlooking the vineyard is a rather special cow. She is red and white, and stands stationary in all weathers watching the changing seasons. Thus the "Three Cows" range was born.
